Date-Nut Truffles!

Here is a recipe for one of my favorite treats! They can be eaten by themselves, or served in the banana ice cram I previously posted. They are very sweet and so delicious! They are a very healthy alternative to a regular dessert. Hope you enjoy!

 Date-Nut Truffles

Ingredients

  1. 8 Medjool Dates
  2. 1/2 C. Rolled Oats
  3. 1/2 Cup of Cashews/Almonds
  4. 1/2 Banana or Apple
  5. 2 Tbs. Cocoa Powder (optional)
  6. 1 tsp. Vanilla Extract
  7. 1/4 C. Coconut or Cocoa Powder

Instructions

Place all ingredients except coconut in a food processor and blend until smooth. Take the batter out of the food processor and place in a bowl. Make 1 inch balls of the batter with your hands and set aside. Put the coconut in a second bowl and roll the 1 inch balls in the coconut. Place on a plate and refrigerate. Enjoy!

Banana Ice Cream! Dairy free!

This is actually my favorite breakfast! Yes, I indulge on ice cream for breakfast almost every day. I love the silky feeling the banana gives. I am also lactose intolerant, and can't enjoy milk-based ice creams. I found this to be a healthier and much more enjoyable snack for me! Hope you enjoy!




Serves 1

Ingredients

1 Banana
A small handful of Cashews
A small handful of Raisins
1tbs Cocoa powder
1 cup Frozen Fruit (optional)

First slice your banana into small pieces, and freeze overnight. The next morning, take out the banana and place in food processor. Add a small handful of the cashews and raisins as well as a tablespoon of cocoa powder. Add additional fruit if you would like. Blend until creamy. Serve in a bowl with a spoon. If you want to add some extra flair, just put some chocolate chips, or fruit chunks on top! .

Chocolate Peanut Butter Cookies

Here is a new recipe I made and has win the approval if my picky family! They are chocolatey and peanutbuttery, making them delicious to those who love both. These cookies satisfy the craving for sweets, without any guilt. They check in at about 60 calories each, and are full if fruits and veggies!


Makes 40 Cookies 

3 Medium Sized Carrots
1 Large Cucumber 
2 Large Bananas
1 Cup of Peanuts (1/2 cup of peanut butter)
1 Cup of Raisins
2 Cups of Oats
1 Cup of 100% Whole Wheat Flour
2 Tbs of Cocoa Powder
1 Cup of Water
2 tsp of Vanilla

Set oven to 350°. In a food processor, mic cucumber, carrots bananas, water, cocoa powder and vanilla in food processor. Blend until smooth. In a browl, combine remaining ingredients. Pour mixture into bowl. Stir well. Spoon large amounts onto cookie sheets (lightly greased, or dry), and place in oven. Bake for 15-20 minutes.

Healthy Peanut Butter Oat Bars

While experimenting one day in my kitchen trying to make a delicious snack/granola bar, I stumbled across a cookie recipe on the Internet. After much tweaking, substituting and comparing nutritional information, I have finally settled on this recipe. Hope you enjoy!


½ cup Peanut-butter1 Tsp Vanilla
¾ cup Dates1 dash Salt
⅔ cup Water¾ cup Raisins
¾ cup Ground Oats1 ½ cup Oats
1 Tbs Cinnamon


Instructions

Baking: Set oven to 350°. Mix peanut butter, dates, water, ground oats, cinnamon and vanilla in a food processor. Stir in the remaining ingredients. Press into a 9x13 pan, or spoon into cookie sheet.  Bake for 15-20 minutes. *Note* if baking in pan, pre-cut the bars for easy access :).

Freezing: After combining ingredients, press into 9x13 pan. Pre-cut bars and place in freezer for 3 hours.

Makes: 20 bars and 25 cookies.
