Date-Nut Truffles!

Here is a recipe for one of my favorite treats! They can be eaten by themselves, or served in the banana ice cram I previously posted. They are very sweet and so delicious! They are a very healthy alternative to a regular dessert. Hope you enjoy!

 Date-Nut Truffles

Ingredients

  1. 8 Medjool Dates
  2. 1/2 C. Rolled Oats
  3. 1/2 Cup of Cashews/Almonds
  4. 1/2 Banana or Apple
  5. 2 Tbs. Cocoa Powder (optional)
  6. 1 tsp. Vanilla Extract
  7. 1/4 C. Coconut or Cocoa Powder

Instructions

Place all ingredients except coconut in a food processor and blend until smooth. Take the batter out of the food processor and place in a bowl. Make 1 inch balls of the batter with your hands and set aside. Put the coconut in a second bowl and roll the 1 inch balls in the coconut. Place on a plate and refrigerate. Enjoy!

Banana Ice Cream! Dairy free!

This is actually my favorite breakfast! Yes, I indulge on ice cream for breakfast almost every day. I love the silky feeling the banana gives. I am also lactose intolerant, and can't enjoy milk-based ice creams. I found this to be a healthier and much more enjoyable snack for me! Hope you enjoy!




Serves 1

Ingredients

1 Banana
A small handful of Cashews
A small handful of Raisins
1tbs Cocoa powder
1 cup Frozen Fruit (optional)

First slice your banana into small pieces, and freeze overnight. The next morning, take out the banana and place in food processor. Add a small handful of the cashews and raisins as well as a tablespoon of cocoa powder. Add additional fruit if you would like. Blend until creamy. Serve in a bowl with a spoon. If you want to add some extra flair, just put some chocolate chips, or fruit chunks on top! .
